Front Porch Fridays by Chef Lori Nichols-Davies Are you allergic to coconut products? Coconut allergy is always a concern. Be sure to ask new guests if they have a food allergy. Be mindful that pasteurized cow’s milk is a far worse allergen than coconut milk. Corrupted casein protein from high heat as well as corrupted lactose sugar that lacks the natural lactase enzyme to properly digest it have caused many to be allergic to cow’s milk. Pasteurized cow’s milk is number two on the list of the top eight troublesome foods. A study published by the University of California at Berkley, June, 1999 Newsletter showed that roughly, 80% of various nationalities are allergic to cow’s milk. When tolerated, coconut milk and cream can be your best alternative to cow’s milk or cream. Compared to rice milk, almond milk, or soymilk that are offered today in every chain store, coconut milk is the only one that gives us desperately needed lauric acid. “Lauric acid oxidizes all fats four times faster than steric acid.” (American Journal of Clinical Nutrition, Mary Enig, Eat Fat, Loose Fat, p. 62.) This is its secret to why we lose weight with it. Autistic children could probably tolerate coconut milk but certainly not pasteurized cow’s milk. It is more egregious than wheat to these suffering children. In comparison, coconut milk with its lauric acid is a superior food to rice and almond milk, when tolerated. Coconut milk compared to pasteurized and raw cow’s milk Lauric acid is therapeutic, an essential fat to ward off pathogenic bacteria and virus. In a world threatened by germ warfare and flu pandemics, coconut milk is the ideal universal guard and protector for those who travel and are allergic to cow’s milk. Today’s highly processed cow’s milk heated to extreme heat of 350 F. (180 C.) destroys bad bacteria yes, but also seven healing essential digestive enzymes. Many researchers since the 1930’s believe that if cow’s milk were “not pasteurized”, milk allergies would decrease. The Milk Cure” was actually prescribed by medical professionals from the time of Hippocrates. Even 250 years ago the German born Samuel Hahnemann MD, Father of Homeopathic Medicine, recommended the Milk Cure. So did the Mayo Clinic in North America in the 1930s. Yet, food manufacturers continue to overlook the science, as pasteurization and skimmed milk products make higher profits. Corrupt business values money more than health. To protect themselves from death, East Indians for centuries “gentle steam” their raw milk. A suspicious lack of mandatory education in sound nutritional principles based on science at Elementary and High School levels has left families with no wisdom to protect themselves. More and more mothers work outside the home, and nourishing traditions seem to get forgotten. Compare coconut milk to “No Fat” Dairy Dairy sales exceed all sales of all other foods. Soymilk has hormone adjusting phytoestrogens that cause men to become feminine, and young girls to have accelerated breast formation and menstruation as young as age seven, and boys in puberty to have shrunken penises. It’s dangerous to men and far too controversial for children to be fed soymilk. As of March 2008, the Weston A. Price Foundation in Washington has applied to the FDA to get soy products “Off the health food list.” Coconut oil treats osteoporosis and IBS According to The New England Medical Journal osteoporosis affects 15% of the population. The American Journal of Clinical Nutrition (1996; 64:291-6) published a study done at the University of Iowa with babies fed formula rich in coconut oil. They showed improved absorption of fats and minerals. Many adults have problems with absorption as stomach acids lower, and enzymes lower with age. Seniors suffering osteoporosis would find increased absorption of calcium and magnesium for bone strength with coconut milk. Two thirds of the world does not drink cow’s milk yet are spared osteoporosis. Why is this? They eat coconut milk and oil, which helps calcium absorption. Yet, osteoporosis is increasing in North America as butter and animal fats with A and D are rejected by diet dictocrats. In an incessant campaign, North American Dairy Councils from the 1940’s to the 1980’s has demonized coconut milk as well as raw cow’s milk. The mayo clinic prescribed as “The Milk Cure” in the 1930’s, as milk has seven enzymes vital to life. Pasteurization destroys them. The consequence is rising irritable bowel syndrome, (IBS). In Canada, Canadian Living Magazine published an article in 2004 written by a dietician who stated that IBS affects 20 million Canadians.
